Treacle toffee and parkin are part of Bonfire Night in the North of England, especially in Yorkshire.

With a very leisurely pace on our walks, plenty to visit, a fantastic firework display behind the medieval Lancaster Castle, roaring fires...it is guaranteed to get you in the mood for Christmas!

PARKIN

1 pound oatmeal
1 tablespoon baking-powder
1 desertspoon ginger powder
4 oz margarine or other fat
4 oz golden syrup

Sieve the oatmeal, ginger powder and baking-powder together twice. Rub in the fat. Mix to a stiff dough with warmed syrup. Place mixture in a greased bread tin and bake it. Leave it to cool before turning it out. Many folks leave the Parkin in a closed tin for a couple of days before eating it, cutting the parkin into slices as required.

Eat around the bonfire after piping hot "jacket" potatoes - accompany with some homemade treacle toffee!
